Cembalo is a brand synonymous with quality, local tradition, and Cilento tradition.
Vincenzo runs Salumificio Cembalo with his family: his wife Grazia and their children Lucia and Mario . A small, artisanal business that has grown while remaining faithful to its values: respect for the raw materials, meticulous workmanship, and authentic flavor.

Our roots

Ours is a tradition passed down from our grandfather: ancient processes , slow times, true craftsmanship. We produce a line of artisanal cured meats typical of the Campania region, with a character that speaks of Cilento and its cellar traditions.

Raw materials and short supply chain

We select quality domestic meats and work with a short supply chain : the pigs come from the local area (Cilento / Vallo di Diano), so we control every step and reduce the distance between the farm and the laboratory.
Our cured meats don't have a very long shelf life : we don't use added preservatives ; we only use salt , pepper, and spices . We favor natural curing and careful temperature management to preserve authentic aromas and flavors.
